OK before I get to the news I thought I would share another old video. This is another one that I transferred over to Motion Box. You guys don't get to see Phoebe too often, so here she is. This was taken last year.
Now on to the news. I got an email from Mom and she's going to "hopefully" leave Mike's house on Sunday. That should put her here on Tuesday. That's good because our reservations are for Wednesday.
Then she said that she did not have to rush home because Daryl and his family will be going to the lake house for Thanksgiving. So, that means I may have Mom here for Thanksgiving.
Now the problem. I can't cook a full Thanksgiving dinner, not this year. I'm no where near ready and don't have anything. Plus my kitchen is not in shape for a full day or two of cooking.
I have to come up with something, pretty quick, that I can cook for Mom just in case she's here on Thanksgiving. It doesn't need to be fancy and the special things she likes I don't know how to cook. She likes homemade cranberry sauce and she loves creamed onions. I don't like either one of them so I never learned to make them the way she does.
Meat will be on the menu, but that's OK. I'm not going to force Mom to change her holidays. She is Mom and that's all there is to it.
I'll know for sure by the weekend. So, until I know I am not buying any extra groceries. Once I know, for sure, I can go to the store after the defroster board is replaced on Monday. That's not a lot of time.
I was thinking of making the Lemon Chicken recipe I posted over on Kitchen Chatter. It's in the crockpot so that will be easy. Then I could serve a nice rice and a veggie.
Thoughts? Remember it has to be easy, not too expensive and can be made at the last minute.

If she's like most moms, whatever you do will be just fine with her. One time when I had the family Christmas dinner, I fixed four different kinds of soup. It was amazingly successful, and people still talk about it. It was much easier than the traditional dinner.

How about a turkey breast only its cheaper and much easier than a whole bird. Martha Stewart did a great show with Emeril Laggasse making this I bet you can find it on her site. As far as any side dishes I go with the steam in bag veggies, they are cheap and good, no pans required just pop them in the microwave for 5 minutes and you have fresh steamed veggies! And if you want stuffing stove top is cheap and easy.

I bet that lemon chicken would be good. You could also spend more time visiting with your Mom, rather than cooking--just pop it in the crock pot, and it's ready when you are!

How about a cornish game hen for Mom with maybe a wild rice and veggie side dish.
I never strayed too far from tradition when I cooked holiday dinners, no one wanted to be adventurous...;p
Whatever you decide to prepare, it's the time together that counts!
